Sbrisolona tart

A tart fought over by Mantua and Cremona, the "Sbrisolona" is produced with a mixture of yellow and white flour (wheat flour and corn flour), sugar, egg yolks, lard and butter, almonds, and grated lemon peel. Towards the end of its baking time, the cake is covered with pastry sugar. Traditionally it is broken into pieces and not sliced, taking on various shapes. It may be accompanied with Zabaione egg-cream, mustard, or dunked in wine or grappa.
