Salamella is a type of pork sausage (lean shoulder, soft fat trimmings of bacon and ham ground), salted, seasoned with garlic and pepper and stuffed into casings and stringed to make a chain of sausage. They are about 15 cm long and have a tasty flavour of fresh meat, a faint scent of garlic and are red ruby in colour. It is sold fresh and consumed cooked, grilled or cooked in a pan with white wine and herbs (never boiled); it can also be crumbled by hand or with a knife and used as a condiment for “pilota rice.”
